I'll be smoking a turkey breast, a butcher's cut brisket flat, and some fresh kielbasa.

What wood would you use? Note, all this will be smoking at the same time.

Just go light on the smoke if this is your first time.  Poultry sucks up smoke like crazy and your guest may not like it.
