Simple, cheap, and delicious crock pot dip recipe
This is my first contribution to the cooking subforum. Hope someone likes it!
This dip is super easy to make, cheap, and very filling! It is also great for the cold weather. I love taking it to football parties this time of year.
Go to the grocery store and get the following:
One of those tubes of Jimmy Dean sausage (or store brand equivalent). The regular type.
Get two 8 ounce packages of cream cheese (or store brand equivalent).
Get two 10 ounce cans of rotel. I usually use one original and one mild.
Your choice of chips. I like fritos or Scoops the best.
Take sausage and throw it in a skillet. Brown the outside. While you are doing this use a spatula to seperate it into bite size pieces.
Take browned sausage (I usually discard the grease but you could keep some for extra flavor), rotel, cream cheese and throw everything in the crockpot. Run it for a few hours till all ingredients meld together. Taste test and set to low or keep warm when it is ready!
You can also make it a little spicy by substituting Jimmy Dean hot sausage and/or hot rotel. I have a friend that also adds red pepper and/or cayenne to it which gives it a little more kick.
I had someone tell me about this at a party a while back, and I forgot who it was and how to make it.
I had one of my deer made into breakfast sausage (minus the backstraps, of course), so I am going to try it with deer sausage.

I assume this would be for a small crock pot? Doesn't seem like it would be a good idea to use that in a bigger model.
I've done this once with cream cheese but usually do it with velvetta. Both are pretty damned good.
Yeah, we have been making this for years with Velveeta, one "regular", and one "Mexican" brick. We also put a small amount of milk in the bottom of the crockpot to prevent initial burning of the cheese. Good stuff, but very high in calories. We use the "Hot" Jimmy Dean Sausage, and the "Original" Rotel Diced tomatoes and Green Chilies. You can vary the hotness by adding or leaving out the Chile's juice.
Good stuff on Tostitos Scoops. This shows up usually around The SuperBowl time of year.
I made it with a pound of hot venison breakfast sausage, 2 blocks of cream cheese, 1 can original and 1 can mild Rotel. I also added 2 cups of shredded sharp cheddar.
Unfortunately, I also had a roast in the oven.
Wife and I went so crazy over the dip, that we got full and couldn't eat our roast.
Guess what is for supper tonight?

No problem... I've made a meal out of this dip on so many football Sunday's. It's so easy to do and so unhealthy!

Try it with the cream cheese. I prefer that over the velveeta by far...

I use a medium size crock pot. I think it's a 3 quart but could be a little bigger. Everything fits fine with a little room to spare (but not much).
I forgot, we also put one small can of sliced black olives, drained, with the mexican velveeta and chiles and sausage.
Someone at work always makes this and brings it in when we have luncheons. It's always the most popular dish!
Velveeta and Rotel dip: AWESOME
(of course, you better wash it down with a big glass of Metmucil before you hit the sack otherwise you'll be giving birth to a brick two days later)
