Simple roast chicken?
Plan on roasting a whole chicken tonight. Nothing fancy, just salt pepper, and a little rub of some oil. Anyway, how hot and how long? How do I get a good skin?
As with most things, 350 degrees. I would also suggest some rosemary. It's great on chicken.
As for time, in a broiler pan, put it in for an hour. Check it after that. Then check it every 15 minutes thereafter. Usually no more than 2 hours.
For a nice skin, I take it out of the oven and turn the broiler on. Once the broiler is nice and hot I put it back in, with the chicken upside down. Once the bottom is crisp I turn it right side up and crisp it. Cause I'm a fat kid and love crispy skin.
