I bought a 1 lb package of powdered Sodium Metabisulite on eBay but have never used it before.
There is no instructions on it to tell me how much of this stuff to use per gallon of water...can anyone shed any light on this?

It depends if you're using it to sanitize, add to must or adding to wine. Please clarify use and we can go from there.
If you're using it for wine making, use "Potassium Metabisulfite" instead.

Well, I am brand new to brewing...started out attempting to make wine but really I'd prefer to do hard cider or beer.
I was looking to use this as a sanitizing agent for my equipment.
The next question is when to replace.
It has a unique smell. You will notice it immediately. If it no longer has any smell, it is time to replace.
Why use it and not bleach? Bleach is hard to completely remove from your containers and can alter the flavor of your brew.
