Best way to store Black Pepper
Hey guys I'm wanting to store some black pepper and wanted to see what everybody else recommends as the best way to go.
I plan to purchase the whole kernel un-crushed black pepper and was then going to put them in vacuumed sealed bags, does this sound like it would work fine.
Has anybody else stored much of it and if so how did you do it?
It lasts a long time un-ground. I imagine it would last for quite a long time vacuum sealed.
That's how I'd do it.
I store it in Mylar with an O2 absorber.
(Whole Peppercorns)

Me too.
I just leave mine in the container it comes in. I have a huge ass bottle that we (I) have been useing for several years with no issues. My better half doesn't like pepper.
I don't think there are any little creatures that like pepper....
BTW: I have lots of pepper stored, I like it.
http://en.wikipedia.org/wiki/Black_pepper#Flavour
"Pepper loses flavour and aroma through evaporation, so airtight storage helps preserve pepper's original spiciness longer. Pepper can also lose flavour when exposed to light, which can transform piperine into nearly tasteless isochavicine. Once ground, pepper's aromatics can evaporate quickly; most culinary sources recommend grinding whole peppercorns immediately before use for this reason. Handheld pepper mills or grinders, which mechanically grind or crush whole peppercorns, are used for this, sometimes instead of pepper shakers, dispensers of pre-ground pepper. Spice mills such as pepper mills were found in European kitchens as early as the 14th century, but the mortar and pestle used earlier for crushing pepper have remained a popular method for centuries after as well."

naw im not great i just actually use that grey matter between my ears and behind my mouth for something other than a sponge
We have a great big plastic box of black pepper in the office. I bought it at Sams club.
The best by date is in 2002.
We still use it and no-one has gotten sick.
It just sits on the counter in the kitchen, no special storage required.
So from what everybody has said it sounds like either way would be a good solution.
Either storing them in vacuumed sealed bags and kept in a dark location, or putting them in mylar bags with an O2 absorber.
I haven't used mylar bags before but can they be used in a Foodsaver?

Saw on a website where you can seal them with an iron and a flat piece of iron on the back side . . . can't wait to try that myself after we get some more bags.
