Indeed, they are a cool looking bird, but usually new duck hunters change their minds about eating Mergansers once they get them open.

Ducks are classified in two ways:

Puddle ducks

Diving ducks

Puddle ducks are typically grain eaters while diving ducks typically eat fish. An exception to this is the shoveler. While usually a fisheater, they transition to grain eaters during the migration, and are fine to eat.

For a bottome feeder:

place the cleaned duck on a 1"x4"x6" pine
cook at 350d for 20 minutes
throw away the duck and eat the board

If you shoot ANY duck with a pointed beak do the coyotes and your stomache a favor and throw the damn thing in the woods...... or don't shoot it to begin with.

Of course a drake hoody looks real cool on a piece of drift wood on your wall.

Hooded Mergansers pluck very easy and clean. Picture perfect. If i were stuck in the woods and needed food to survive, i'd use it for bait and try to catch a buzzard.

I give to the dog. You can ID a fish eater by the serrations on the beak, dead give-away.

In NYS the "waterfowler guide" issued every year says they are not fit for consumption.
They are Fish eaters and high mercury content I think.
I shot a Hen a few years back. Ugly as hell. The Drakes look cool though,

Actually, 3 kinds:

Puddle ducks

Diving ducks, and

Sea ducks (Eiders, Scoters & Old Squaw). The Old Squaw is the deepest diving bird in the world, I think...down to 200 feet!
