I think they are ready, they look a little overdone to me actually but my wife likes them cooked longer than I do.
Will try to get after pictures but I doubt I will be able to. They are sitting waiting to get to room temp and freshly done with their first rub down. I am about to rub them again.

Not sure about your taste buds, but I like to add a healthy sprinkle of fresh black cracked peppercorns on top of the Dillo Dust and press it into the meat on both sides before searing!
