but I have never owned a scout rifle before. Will pistol scopes work on them or do they need to be more "scout" specific?

I liked the idea of this. Midway USA Bushnell pistol scope. What do you think?

I think that would work fine.. The important thing is the eye relief. The eye relief for me is at about 11"...

I put a Weaver Scout 4X28 on mine with Weaver Grand Slam Lever Lock medium 1" Rings. Works great.
I wanted something simple and tough..

I use a Leupold M8 2x20 pistol scope on mine and it works great.

I'm happy with the irons on mine.

I have a few scout style setups....On my Ruger I have the Burris scout scope, with QD Rings......On my Steyr, I have a Leupold.......On my Ruger Frontier I have a traditionally mounted Leupold.....there are many options out there. Accuracy, on my Ruger Gunsite with the Burris is excellent and can group MOA all day long. Recoil is timid (for me anyway), and I do not notice excessive muzzle blast. This is probably one of the best purchases I have made. Good Luck OP.

Just for the sake of throwing it out there, don't write off the aimpoints. A compC2 with a 2 moa dot in the low mount is a nice set up. I ran a T-1 on mine for a while and really liked it but wanted a smaller dot at least.
