I plan on selling a sidefolding stock off a Polish Tantal along with the upper and bakelite lower handguards. What would be a fair asking price? They are in new condition.

I think pricing questions in the tech forum are frowned upon because many times they either turn into bidding wars or for sale threads outside the EE so they tend to get deleted.
I wish I had the answer for you OP but I know very little about AK's, maybe someone will come along with an answer an answer for you.
