Is the GSG-5 P and PK legal in NJ? I assume the Carbine is all good?

Nope... magazine outside the pistol grip, and an unloaded weight over 50oz. Two evil features, means illegal in NJ.
Yes, the carbine is legal.

That is cool but I would rather have the classic MP5 handguard.. P is not legal...so I guess its gonna be the carbine. It is what it is.
