If you're actually grilling and not BBQ, a squirt gun.

Actual BBQ, sauce mops.

I use one of those zep spray bottles from lowes for my spritzing needs...usually some beer, apple cider vinegar, soy sauce and some Worcestershire or a variation thereof...works great

I’ve been known to use the hose when I get a flare up on my dad’s propane Weber.

The instant read is worth the money. Yes it's just a thermometer but stop buying the $15 (used to be $7) crap on Amazon.

Get a Thermapen.

Also, use lump charcoal.

And sharpen your damn knives. General knife, something for trimming, and a slicer will get you started. Just keep them sharp

For smoking a brisket, nothing really except a meat thermometer and thermometer on the smoker. Foil or butcher paper for wrapping. It ain’t complicated, it just about skill.

A real one. Not a puny cheap one. The Weber one is the minimum to buy. So easy, so efficient, and can be used as a grill itself with a grate on top.

Ha, we use a MAPP torch to start our charcoal or wood, never fails, and no lighter fluid EVER!

BBQ gear is one of those areas where someone is always willing to sell you something of questionable value.  My experience is, it's less about the gear and more about the technique.

That being said, I think most of my good gear comes in the form of good consumables.

- Good lump charcoal.
- Lots of thick foil, 18" wide preferred.
- Good butcher paper, on a spool.
- Toothpicks, for probing, securing meat, and propping up to eliminate juice pools on the top.
- Good thick nitrile gloves.
- AL food trays of various sizes.

Rarely use firestarters anymore, like Gunslinger808, I keep a MAPP torch in my bbq kit. I also keep a set of welding gloves in my kit, so I can directly handle coals.

When I'm cooking on someone else's smoker, I'll use the foil and cut up AL trays to manage the smoke / air flow in the chamber, and shape the burn area for the coals.  I have several instant read thermos, but use them mostly for tenderness probing.

I used to keep a very nice knife set in my kit, for prep / trimming and then for presentation cutting.  But, too many lunk heads kept abusing my good blades, so now I keep a set of $8 knives off of Amazon, and a stone to keep the edges sharp.

Got a sample at SEMA.  The first time I used it, I was sold.

Thermoworks Thermapen is a must-have.  Instant read and accurate.  Don't buy a cheap imitation. I keep a good knife and a Thermapen in my travel bag.  I have saved the day with it more than once.

Cotton gloves to go under the nitrile gloves. It will keep you from burning yourself when moving the meat 10× better than the thick silicone mitts.

For my Kamado Joe (and similar cookers): Kick Ash Basket

And, +100 on Thermapen and the Smoke units.  Buy directly from them to avoid chineseum crapola.

MAPP hasn't been made for 15 yrs now, so unless you have a secret supply, you're buying MAP Pro (yellow bottle).  It's ~3700F which is only 130F hotter than the blue bottle.......and 3x the cost.  Don't waste your money--it's a bait and switch for those of us that remember the good old days of ~5300F MAPP.

OP, it may be crazy but if you’d tell us what you already have and what kind of rigs you use — we’d be able to make relevant suggestions instead of just shooting blindly in the dark.

Didn't know I needed this until my wife got me one. Makes prep for brisket, butts, ribs, etc so much easier and cleaner than what I was doing before
