Charcoal starter and REAL charcoal.
A real one. Not a puny cheap one. The Weber one is the minimum to buy. So easy, so efficient, and can be used as a grill itself with a grate on top. |

For smoking a brisket, nothing really except a meat thermometer and thermometer on the smoker. Foil or butcher paper for wrapping. It ain’t complicated, it just about skill.

BBQ gear is one of those areas where someone is always willing to sell you something of questionable value. My experience is, it's less about the gear and more about the technique.
That being said, I think most of my good gear comes in the form of good consumables. - Good lump charcoal. - Lots of thick foil, 18" wide preferred. - Good butcher paper, on a spool. - Toothpicks, for probing, securing meat, and propping up to eliminate juice pools on the top. - Good thick nitrile gloves. - AL food trays of various sizes. Rarely use firestarters anymore, like Gunslinger808, I keep a MAPP torch in my bbq kit. I also keep a set of welding gloves in my kit, so I can directly handle coals. When I'm cooking on someone else's smoker, I'll use the foil and cut up AL trays to manage the smoke / air flow in the chamber, and shape the burn area for the coals. I have several instant read thermos, but use them mostly for tenderness probing. I used to keep a very nice knife set in my kit, for prep / trimming and then for presentation cutting. But, too many lunk heads kept abusing my good blades, so now I keep a set of $8 knives off of Amazon, and a stone to keep the edges sharp. |

Cotton gloves to go under the nitrile gloves. It will keep you from burning yourself when moving the meat 10× better than the thick silicone mitts.

View Quote MAPP hasn't been made for 15 yrs now, so unless you have a secret supply, you're buying MAP Pro (yellow bottle). It's ~3700F which is only 130F hotter than the blue bottle.......and 3x the cost. Don't waste your money--it's a bait and switch for those of us that remember the good old days of ~5300F MAPP. |
