Just the meat...like a steak or however the meat is usually eaten .....not "as used in _______ recipe."  So what is the best wild game steak/meat?

Elk?
Moose?
Frog legs?

I forgot woodchuck. No bullshit, my cheapskate friend would shoot them and cook them. He convinced me that they are vegetarians and live “clean”, so I tried it. I was pretty amazed.

Handling has everything to do with it. Well that and prep and cooking.

Overall easiest is antelopes. They seem less game if if there are some screw ups

General consensus is moose, but I would say dall sheep is likely the best...Well taken care of and properly processed moose will come very close to tasting like quality beef..few do it right......We spent a lot of time and money getting it right, and our meat shows it...

Diet of the animal is more important. Antelope from the plains sucks. Antelope from an alfalfa field...Amazing.

Antelope?

Easy hunt. Shoot, drive out pick them up, then haul back to camp. To sample the meat, lift the tail, lick the butt, and you have the taste of your meat right then and there.

The downside, for me, is the meat. Tried it all kinds of different ways and they were just not tasty. Tolerable was jerky, but it sure was tough.

Elk is by far the best stuff I've had, and I've had it that fed on a variety of food sources and can't tell much difference.

I'm not saying something else isn't better - I'd love to try Moose and wild sheep - but elk is the best I've had by far.

My area it's 100lb feral pig and doe whitetail deer,

The bucks are edible too, but you got to soak the meat in bit of salt water for several days to get most the gamey out.

I got a moose in 2002.  The meat was great!

Do you ever go for black bear?  I just got my first one in September.  I’ve only made chili with it so far but it’s great!  It’s ground meat and tastes like beef.

I also made bear lard with the fat and I honestly can’t tell the difference between bear lard and pork lard.

Frog legs are damn good
Oysters are better

But as far as red meat like deer I would say elk is damn good
But I would take a 100 pound wild hog over most any game animal

Florida. Smaller is generally tastier. Spiney lobster and white tail deer backstrap, cannot be beaten. I've had moose, elk, goat, bison, caribou, bear...you name it.

Our Osceola turkey fondue gets fought over as well. Tough elements make tough meat. Sorry losers.

Yeah have had most any kind of game meat at one time or another, black bear was good, grizzly was batter oddly enough, my buddy made some grizzly bacon off a big male he took and it was delicious, some of the best I've had which surprised me...one of those deals of what they have been eating and how you take care of the meat from pulling the trigger to freezer...I know way back in the gold rush days, paid hunters would go get Dall sheep for their top clients, moose/caribou for the poor/workers......Dall sheep have always been claimed to be the best game meat..I've had it once, out of a cast iron pan on the side of the trap line trail, it was excellent, but most anything would have been under those conditions....Some Indians I knew used to cook up the best shit on the side of the trail..used to love running into those boys...they did lobster once..couldn't believe it, middle of nowhere on the side of the trail...got a pot of boiling water full of king crab on top of a propane deep fryer...crazy fuckers...
