hey guys - mostly just a lurker around here but found this forum and thought I'd share since I'm fresh off a big cook last weekend.

started with a 21 lb prime - def bigger than I normally look for but it was the best looking one. started with a little pickle juice spritz and finished with joes kc big meat rub, then some course black pepper.

cooked on my yoder ys640 with 50/50 knotty wood plum and almond. a full freaking 24 hrs later the point end got up to temp and felt just right, although the flat end was about 210 by then. rested for 5 hrs
