Sorry if its been asked before, but can I swap out a P365x grip module for a P365x macro to give me a little more real estate in the butt?

Yes, but you'll have an underbite unless you've got an XL slide. Wilson makes a Macro grip module with the short dustcover.

I’m not surprised it balances really well, what a lot of people don’t seem to understand that a longer grip with a shorter slide makes for a very flat shooting pistol. You have added leverage with the longer grip and more weight at the lower axis. My favorite set up of 320 is a full length grip with the short X-compact/sub compact 3.6” slide. That set up is one of the fastest set ups I have and I have comped P320s.
