Put a threaded nipple on the pvc. Put opposite threaded nipple on pex.

dont worry just use 1" shark bite and forget it it will be fine.
ETA The 3/4" pvc has roughly the same diameter of the 1" pex I have used shark bite style fittings for years no prob and I have used John Guest fitting for 10 years before that with no prob.

I was thinking you could use pex connectors to connect it to the sink instead of zip ties but this is the first I have heard of critters chewing on it in houses...so I'm very interested to see whats said about that...I was planning to replace all my plumbing in my house with PEX this year...but want to see what others say about that now...FYI I am no plumber lol

Buy some pvc that is larger in diameter than the pex to sleeve it with.  Then get some fernco reducers - one for where the pipe exits the slab and the other for where the pipe enters the faucet.  This way you can keep the pex and create a UV/critter shield for it that can be replaced if ever damaged.
