Thick cut is the only way.

Unless the missus buys it, in which case it is thin.  I have no idea why, but while likes thick cut bacon, every time she buys bacon, she fails to look for thick cut and always brings home regular cut.

Lower heat and longer cooking time and you get better than floppy or crispy, which is chewy.

I use thin cut for sandwiches and thick for eating by itself or chopping up for my mashed potatoes. I even have different uses for limp and crispy bacon. It's ALL delicious!

I like crispy bacon, but steaks I'll eat medium rare to rare.  I don't have a huge problem w/ blue rare but I prefer a warm center, and I've had steak tartare which was good.  Beef is good rare.  Pork should be cooked properly.
