4,5, and 6 would be good if you've never seen them. The new movie picks up after them and addresses the gap in time since we've last seen those characters.

I'd watch Ernest Scared Stupid, it is on par with that quality wise, but Ernest makes more sense.

4, 5, and 6 would be all you need to understand the story.  1, 2, and 3 if you want to understand a little dialog here and there.

Ignore the prequels. They're pretty much shit to anyone who isn't severely autistic and finds CGI octogenarians doing backflips with lightsabers entertaining.
