Pick up a can of Nevr-Dull I promise it's only a five minute job cleaning even the nastiest cylinders.  Available near everywhere Walmart, grocery stores, Home Depot, Lowes, Advance Auto, etc, etc.

With an abrasive (garnet) compound.

A "lead-away" cloth is specifically made for cleaning carbon off stainless steel.
It literally wipes fouling off with no messy liquids or pastes and does it fast.

Cut into patches it can also clean leading from bores.

DO NOT USE on  a blued gun, it also wipes bluing right off.
I'd be hesitant to use on a plated gun too.

Bore Brite is a polish. Bore paste is a cleaner.

Nevr-Dull and Flitz will clean the carbon off the gun but leaves the the lead deposits nice and shiny.

Know anyone who works or owns a dry cleaning business?
The dry cleaning solution is amazing with cleaning carbon,
Decades ago in army basic, the DS pulled a 5 gallon can of it out for us to use on are M16 A1 before an inspection
Keep it off of the plastic

I just purchased a Smith and Wesson Model 27; what should I use on the carbon build-up to avoid stripping the blueing off?
