My sister and her family came for a visit. My BIL has been using the heck out of this thing. It gets the WIC stamp of approval for a "good working steel" it's O1.

I've only made two of these. This one and the one that @smokey has.

Because WIC complained I had too many knives for grilling, and because SS complained I did not show how glorious the meat was cooked...And for the record the DFarm knife cut exquisitely.

About every grocery store Phalaenopsis my wife bought over the last 15 years is in flower right now. The white one is an actual natural species, and also what she wore way back when we got married, so it rates a lot higher to me.

Yeah that may need to go back.

Rick used to say Hinderers were supposed to flip a different way but that sounds like a Friday afternoon knife.

I almost did that in my Spanto.

But I was determined to figure out why the knife guy trinity was Chris Reeves, Hinderer and Strider but didn't want to buy a Strider.

My pre Tri way XM came hard as fuck to flip. I did some adjustments and found a good balance.

It's a comfortable knife in the hand and alright to use.

I asked Kuraki to regrind it since it was thick by design.

Now it's a solid knife. But if ZT made a version of it.... I'd buy the ZT.

Hinderer also sells "skinny" knives which are more my speed.

My Tri-way skinny Hinderer is solid, cuts well, and is better than if ZT made a version of it.
The only one I had real interest in was the skinny no-choil slicer, but they seem to be unicorns.

Flank steak...you dont want it rare, too chewy.

Also, First time on a new grill.

Also, Also, you do not get to tell anyone anything is overcooked... Mr. Flammerwerfer.

How many cuts of beef and pork have you turned to charcoal in the previous 12 months?

picking up a new car recently and talking to our salesperson, he pulls out this ridiculous wallet that is in sad shape. He and I have similar tastes in cars and shoes, so I show him what he should be carrying.

Couple weeks later we are at a community fund raising event and he pulls me aside with another guy and tells me hey, show him your wallet.

Is good stuff.

Spent the day outside to clear the head. Went to play paintball with the kiddo and he's improving and getting the feel of his set up.

A friend dropped by with some smoked meats. Delicious.

We did some small team drills. Kiddo had some old school guys coaching him between sessions, giving him some real good insights. It was fun seeing him working with dudes older than me and really trying to soak it in

After that, inspired by the man, the myth, and the legend @MaxxII , flank steak was on the menu.

The wife said she was not dealing with my nonsense so she got it plated and served before I could set up some Pics in better lighting
