Well, since the family didn't care for bell peppers, we added sweet pickle relish to the chili. About a tablespoon, just adds a little crunch.

According to all of the fail chili recipes I see here, chunked meat.

Fresh cracked Sichuan peppercorns. Gives a little unexpected punch.

Chili's, beef from a roast cut, salt pepper. That's usually about it. Unless I'm making it for someone who wants a ground beef and bean type of concoction. Then anything goes. I've put some coffee in there before, corn, bell peppers. I mean, once the beans go in it's like, fuck it. Right?

I cube up my brisket leftovers and freeze them.
I use that as the meat and its fantastic. |

Chilis and meat seem to be surprisingly rare ingredients in chili.

I smoke Chuck roast, then sear it, then cube it and put it in mine.

Sliced black olives Fish sauce Diced red pepper Smoked paprika Sriracha (the above are individual add-ins, I don’t do all of them in a single batch) I have heard of folks using chocolate but I’ve never done it myself. |

Chipotle peppers
some sort of sausage ideally my main meat would be beef or venison stew. It's normal to put different meats in the same batch - sausage, venison, maybe even some ground beef or venison, just because we have lots of the latter. |
