Put a post up last week on the newest addition to my food truck BBQ business... an Iowa made Corn and Potato Roaster.

We have a GIANT roasted potato stuffed with butter, pulled pork, queso cheese and garnished with bacon and chives.
Attached FileOn the side is our version of an ELOTE with Salt and Pepper Crema, Lime Seasoning, Cilantro and a dusting of Parmesan Cheese.
I must say... it was INCREDIBLE. The roaster cooked both the potatoes (60 minutes) and corn to absolute perfection. Corn is no where near season here in SW Ohio so when the local crop does come in later this summer it’s going to be ON.
Anyhow will be doing new recipe experiments all month.
