I downloaded the isos from Microsoft when they were still available. Looks like archive.org still has em. Updating win7 is a pita, tho.

Live boot Debian or Ubuntu. Put Win7 install ISO into your disk drive.
dd if=/dev/sr0 of=~/win7install.iso


Just about the easiest way to do it. I don't deal with iso creation in Windows.

I too prefer using *nix to make my ISOs, but when forced to on PCs I have used WinBin2Iso.

It works well and will go from optical disk to ISO.  Been years since I used it, but I'm sure it is still good.
