Last year I bought a G45 MOS and decided I wanted a G19 MOS to carry instead. I bought a new G19 Gen 5 frame for $175 and am using it with the G45 MOS slide and instead of selling the G45 frame I figured I'd just get a G17 slide for it.
I've been seeing OEM G17 Gen3 slides for about $200, so besides the back plate, is there anything else that would prohibit be from running one on the G45 Gen 5 frame?

The barrel. 17.3 barrels won't work on any Gen 5 guns. You'll also have a gap between the dustcover and front of the slide. There are fillers for that though.
No, Gen 3 17 won’t work with Gen 5 19 frame. Barrel (locking block), recoil spring and slide stop are all issues.

You need a G47 slide. It is Gen5 and will have the shorter recoil guide rod to fit the frame of the G19/G45. I think it was invented for people to do exactly what you want to do. Get a G47 and a G19 and you can switch slides to have long barrel/short grip and a short barrel/long grip (G45).
