The first time I saw Training Day, I really didn't like it. Not sure why, maybe because I was so used to him playing a good guy that I subconsciously didn't like him as a bad guy. About five years later, I watched it again and was supremely impressed with his depiction of the bad cop. He really, really nailed that role.

Beat me to it - he was both in 3 days of the Condor.  Concur with OP's choice of Mads Mikkelsen - loved him in Valhalla rising; even if there was only 10 lines of dialog in the whole movie.

Brian Cox is one of those actors that's been in more movies than you can even name, but he never gets the recognition that he's due.  He's another one that can just disappear into a role, even though as soon as you see his face, you know you've seen him in any number of other shows.

Fonda was a real life asshole who raised two asshole wretch kids. So his roles as villains were easier to believe.

I don't remember who said it, but the remarked that Matthau played a ladies man, a heavy, a cop, and many comedies. He was truly gifted, someone with that face played a ladies man convincingly.

As stated in Grumpier Old Men, he has a face like a catcher's mitt.

ETA: I just realized that could also describe Peter Boyle to some extent.
