That's a good question @TX-Zen The Ph level is what dictates how long it'll last, general rule of thumb is to get it to 4.6 or lower. The batch I sent out to you guys I was getting 3.6~3.8, so in theory, it should last a good while. But, I am a newb/rookie/novice at this so to anybody I sent sauce to, if you notice any weird smells or colors dump it out right away. |
