A really great chili-dog is a work of art, truly.
It can't be boiled, but MUST BE done on either a roller-grill, griddle or fry pan. It should also be sliced (ever so gently) lengthwise (only about 1/8" deep) to give a nice, crispy crust and cook the dog throughout and prevent curling.d A good chili dog is not burnt, but it is almost black/charred-looking. And a natural casing is necessary. Regular Oscar Myer dogs simply won't do. A real fucking hot dog SNAPS when you bite into it. It's NOT mushy or soft!!! WTF?!? Lastly, regardless the chili sauce, it must have thinly/finely-chopped WHITE ONIONS and (usually) yellow mustard - although, my favorite is Boor's Head Spicy Deli Mustard w/horseradish. Thank me later. |

I enjoy just a basic spicy meat sauce on my hotdogs. Ground beef, garlic, chili powder, some tomato sauce and paste to your desired consistency, salt/pepper.
A modest scoop of that and an absurd amount of thickly shredded sharp cheddar on a hotdog and I'm in heaven. The real trick is a good bun. Your average plastic bag hotdog bun is just going to turn into a soggy mess. Need something firm that won't soak up all the spicy meat sauce before you've driven the whole affair into your gut. Even a slender hoagie roll can do the job. |

Even a slender hoagie roll can do the job. Good point about the bun. One made from your local bakery is best and it should be lightly toasted, too, for extra piazza! Soft, doughy buns suck ass.

I'm sorry, but Hormel is nasty compared to the good stuff.
@dupemaster should share his recipe  I fee days later I was desperate and chilli dogs are NOT a thing around here and used homeless without beans. I added some spices but it was terrible. |

VanCamps bean laden can chili. I make sure the beans are so thick piled they slide off the ends and sides. Throw some chopped onion and shredded sharp cheddar on top and enjoy the coming intestinal suicide.
I gets eaten with a fork. The escapee beans that are left are stabbed and savored individually.
