I had the last of the last batch today for lunch. It’s one of my favorite things my wife makes for me. Her dumplins are the best.
I make the stock and chicken, she makes the dumplins and puts it all together.

Dumplings 2 lb bag or 6 cups of sifted self rising flour 1/2 cup chopped fresh parsley 1 tsp poultry seasoning 1/2 cup butter softened 1/2 cup coconut oil or shortening or lard 1 pkg yeast dissolved in 1/3 c water 110•F with 1 Tbsp of sugar 2 cups buttermilk Mix together and knead until well mixed Cover & set in a warm place while chicken cooks to let it rise. Divide the dough into 2 manageable hunks. Flour a board or paper & roll dough out to about 3/8 inch thick and cut into 2” circles or cut into strips. Bring the stock (four quarts minus the chicken) to a boil. Add the dumplings and stir well to keep them from sticking. Boil for 10 minutes covered, 10 minutes uncovered. Add the chicken and salt/pepper to taste. |
