I like the locally produced mild cheddar that I get on sale at the local supermarket.  We buy it in 5 lb bricks.  So damned good.

I love cheese. I'm not far from Amish country. When we go, I spend way too much money on the stuff.

There's some good stuff available at my local kroger too. Vermont Cabot sharp white cheddar is one of my go-to. Guggisberg butter cheese....oh yeah.

One of my first jobs in a hotel kitchen was assembling a five tier cheese display every day.  One day the chef asked me what I thought of a particular cheese, I responded "I don't know chef I haven't tasted it".

He went on a rant that I should never put something on the display that I hadn't tasted.  So each day, he's watch me as I sampled a new cheese going on the display.

Actually he did me a great favor, I do like cheese and got to taste at least 72 different ones.

Parmesan last tme I looked.

I prefer Camembert, but even decent Camembert is simply not available in the USA.

It is very popular in France and is delivered to cheese stores almost daily.
The aroma is rather off putting but the flavor is completely different.
