You process them the same way but avoid all the organ meats and the brain.

It's been years since I butchered cows or game animals but it's like riding a bike some things you just never forget.  I used to help my Dad and Uncle butcher beef. We'd take the sides of beef and put them on a piece of plywood held up by sawhorses and cut meat for the family.  When I was a kid I used to kill gut and pluck chickens for the family.  I've processed my share of ducks and geese, pheasants, grouse etc.  I still kill clean and skin my own deer and elk when I'm lucky enough to fill my tags.  Now days I usually have a local guy processes the four legged stuff, as I've grown too lazy to do it myself.  But I still could if I had to.

Yes.have done so countless including bow killed, trapped, hand caught and once,ignomineously, roadkill....

Op is asking if people know how to butcher.  Anyone can take back straps and call it a day. It takes learned knowledge and experience to process whole animal into "cuts" as one would recognize in a grocery store.

You're not allowed to ever hunt with me then, that's extremely wasteful to throw away everything but the breast meat on birds.
