I took 3 pounds of pork belly and sealed it in a bag with pink salt, kosher salt, brown sugar, and pepper. Massaged and turned it occasionally. A week later I rinsed it off and put in a low temp oven until it hit 150° internal. Probably 10 minutes of active effort.
