This. I can't stand ciabatta for sandwiches. Fine for dunking in a soup, stew or tomato sauce though.

@bigborehound @Gutter1000 listen to your caddy on this one. Trader Joe’s ciabatta baguette. Wrap in foil & bake at 375 for 10 minutes. Then slice it in half lengthwise, brush the inside with olive oil, and pop it under the broiler for 3-4 mins until it gets a little toasty.

Outstanding,  if you put the chicken under plastic wrap and beat it thin it will be more juicy and tender in your samdwich.

I made this sandwich two days ago with leftover smoked chicken on French baguette and it was delicious. Thanks OP.

I also took the left over piece of French baguette and sliced rounds and spread left over pesto and topped with smoked chicken and toasted it in the toaster oven for a snack tonight.

Awesome.

We make the same thing but use roasted red peppers instead of tomatoes. Very tasty. I think it's time to make them again

Not a bad sandwich.   One deli I’d hit had that but with a breaded cutlet.  Delicious.


I make another more/most favorite sammich:

baguette with a smear of herbed marscapone
proscuitto ( don’t over do it)
mozzarella
tomato
fresh basil
a drizzle of olive oil
and key to the magic.....a syrupy thick balsamic reduction on the underside of the baguette top slice.

I mean…pesto, olive oil & balsamic + tomatoes & good mozzarella. And I always brine my chicken breasts, so 100% not dry.
