Those synthetic Victorinox knives are the bomb for bulk work. That's all we ever used when I was getting paid for cutting. But yeah, at home I've got mostly Misono and Masumoto. Aside from the Wusthof boning knife, which nobody seems to be able to outclass for whatever reason. |

He’s gotten several different victorinox knives already. He has a Dexter filet knife that he’s really fond of too. |
