Singapore is oddly mostly north indian style and really interesting. It's not like any other place I've had it but it's really damn good. I actually prefer it to the UK style if I had to choose, but it's a close call
Less heat and more depth to the spices, if that makes sense A good friend told me once that all Indian food is more or less the same world wide (accounting for the differences in regions in India itself), but what makes it taste different is the local ingrediants in each country. They said that there is nothing wrong with how Indians in the US make indian food, but our ingrediants here taste different than the other parts of the world and that's why ours isn't the same |
