Why avocado oil as opposed to peanut or...?

And are green peppers usually not included?  I can't stand them, so will always substitute yellow, red or orange.

The best jambalaya I've ever had, and I've not had it that much, was at a place in Madison Heights, MI called Big Fish.
Spice level was just below my max at that time and man was it good.  Big Fish is long gone now, but I remember it fondly.

I already cooked the shrimp and let them soak for about 2 hours. I don't think that I ever cooked shrimp for more than 3 minutes in my life. Not sure what you are referencing.

I cook my shrimp ahead of time and add them last, but then simmer the whole pot for about 3 hours. Maybe that's what you are referring to? If so, what's your problem with that?

Looks great!  So glad you cooked the rice in the pot, and not separately.  

I've struggled with that but after getting with a buddy that does big jambalayas like that for LSU tailgates, I have it figured out.

I used avocado oil to wipe out the heated pot before cooking just to make sure it was clean. I grabbed the handiest oil available.  It was on the counter. No oil was used in the recipe.   The sausage provided all the oil necessary.  I used the colored peppers for visual appeal.
