It has a curve;

3 weeks more or less fresh

3 - 8 weeks a bit wilted

9+ wilted and sour, fresh crisp taste gone.

I keep my jug in the crisper drawer at the bottom of the fridge so I sorta forget it's there sometimes.

Kimchi I have made myself (kraut too) will keep more than a year if kept in an airtight container that can "burp" itself. You want less air space above it so transfer to smaller containers when less is left. It does change as it ages so when it tastes right to you, eat as much as you can then.

The Kimchi I had in Korea made my asshole burn but damn it was good.
I especially liked the cucumber kimchi.

I could sure go for some bulgogi, yaki mandu, chap chae with some kimchi on the side. Maybe a cold OB Beer.

I had a Korean girlfriend who made her own. It was too strong for me. Ouch.
