Smoked a 9 pound pork belly today over cherry smoke to make burnt ends. Cubed up into 2" cubes and rubbed down with some sweet rib rub. On the egg for 3 hours @ 250-275 and then into a pan with honey and brown sugar, covered with foil and back on the egg for another hour and a half. Hope everyone has a great 4th of July! Get your ass out and cook!!

Is there no end to the awesomeness of pork belly?  This is an evolutionary advancement of bacon.  Serve it up with some beans, jalapeño cornbread, and beverage of your choice.  Looks amazing OP.

What does "into a pan with honey and brown sugar for another hour and a half" mean?  Did you continue smoking them or just let them soak/rest?

I just got a Webber smoker and am learning the tricks.

They look really good.  Happy 4th.

Definitely going to put mine to shame. I'm going to give it 5 to 6 hours of smoke and then throw it in the oven for the rest of the cook time.
