I can also recommend:
Glen Cook: The Black Company
Joe Abercrombie, series mentioned already
I can't recommend:
Brandon Sanderson's Stormlight series. I haven't finished book 3 and honestly wish I hadn't read/listened to the first two.
I've been taking notes for series to get into. I like wandering around in Half Price Books looking for cheesy fantasy book covers, but hardly ever buy anything. That is how I got hold of The Black Company, though.

I'll agree with you. For the current popular book series, these are puzzling to me. I don't get the love for Sanderson. Patrick Rothfuss is also extremely over rated. Red Rising was not my cup of tea either.
I recommend:
Hobb's Assassin over Rothfuss.
Abercrombie's First Law over Sanderson.
Correia's Forgotten Warrior over Red Rising.
Blacktongue Thief by Christopher Buehlman is one I'm just starting, but I'm liking it so far. The Prince of Thorns series is good, but oddly written as it leaves much to the imagination and is in a non-linear format. Anthony Ryan's Raven Shadow is also pretty good.
