I have a yearly Super Bowl party where I host 20-30 folks to watch the game and eat around a week's worth of food each. I like to draw up the menu based on the regional food of at least one if not both of the teams. Although I admittedly want Peyton, Carolina has more well known regional cuisine (and I LOVE pork). Of course, we all know what Colorado is known for:



While I have a couple of ideas, I would love to hear some recommendations for either side. I do a lot of grilling/smoking on the Egg, and am fairly proficient in the kitchen, though I LOVE easy delicious simple food. Anyone have any input? Thanks!

I'm not sure about the rest of the Carolinas, but this (or any apple flavored pulled pork) is very common in the Lowcountry.  Usually served with no bbq sauce, just the juice from the slow cooker.  

Something like this is very common at the "mom and pop hole in the wall" diners with recipes passed down for generations.

Carolina:

Low Country boil, a.k.a., Frogmoore Stew

Bunch of ears of corn, cut in half
Bunch of shrimp
Bunch of potatoes, cut into ~2" chunks
Bunch of kielbasa or similar sausage, cut into large bite sized chunks
Bunch of Old Bay seasoning
Bunch of water
Bunch of fire

Combine above ingredients, except fire.

Place the combination over the fire until it tastes delicious.

Dump on a picnic table covered with newspaper and dig in with both hands.

Hatch is in New Mexico. Chili is the meat, tomato, and beans/no beans concoction from Texas and beyond. Chile, with an "e", is the pepper.  This is all semantics of course.
