I can't afford to race real cars so I race video game cars.  So much so that I bought a tv and a second PS4 so I can leave my wheel and pedals set up.  I'm in 2 weekly leagues, Tuesday nights and Thursday nights.  Public lobbies are generally shit shows but (most) everyone in the organized leagues tries to race clean.  One of the leagues streams the races and has people who do commentary.  

Whatever, it's fun.

I collect watches and knives. I have no idea why. I can only wear/carry one of each. I really don't want to think about the amount of money I've spent on these in the last 30 years.

Educational documentaries.
I can be perfectly happy all day watching documentaries on dams, or commercial fishing, or the mating habits of some frog in some country I will never go to, or the details about some battle that took place hundreds of years ago in a country that no longer exists.
Nature, history, science, how things are made or how things work. I can watch them for hours.

I hated learning history as a kid. Now you could sit me down to an 8 hour documentary on the history of french monarchs or something like that, I'd watch it.

On the plus side, I can totally sound like an intellectual about a shit ton of subjects.

I play in a 5e game and run a Swords and Wizardry game.  

Not to mention playing Forstgrave, Chain of Command/28mm WW2 wargaming, and various Wild West miniatures rulesets.

Mine would probably be model cars. I do it off and on. The Mercedes Clk-gtr I am currently doing has been a work in progress for like 4 years now. Yes.  I actually went to a junkyard and bought a seat out of a car, then mounted it up on a t-slot aluminum frame for my cockpit.
