So I'm assuming OP is calling rare/medium rare steak "undercooked"?
Beef and chicken aren't the same thing, and acting like they are is ignorant. Rare/medium rare steak is delicious and safe to eat. You lose too much flavor, juice, and tenderness with steak when it's cooked too much (anywhere past medium). Chicken on the other hand does not benefit from being cooked the same way. Chicken which is not fully cooked (probably equivalent to medium well for beef) is gross (flavor and texture wise) and then there is the obvious issue with germs. FWIW, I sous vide my steak and finish sear it on the grill or in a skillet. That meat may be rare but it's cooked for hours and is just as safe as a gray shoe leather steak that's been overcooked. So to sum up, NO people (well there's always a few idiots) don't do that with chicken, but chicken and beef are apples and oranges. It's like OP asked "for those that do airsoft, do you shoot people with real guns too?". The answer is the same, NO, because airsoft and real guns they are not the same thing, just like beef and chicken are not the same thing. |

I'll eat my chicken and turkey breast medium rare. Of course I also cook it in the sous vide @ 135* for 4 hours so I know it's safe. It's so damn good.

Undercooked chicken is.... undercooked, unsafe.
Undercooked pork is... undercooked, unsafe. Undercooked pasta is.... undercooked, still Undercooked veggies are.... undercooked, still stiff, not very palatable. Rare to Medium Rare steak is.... cooked to a level of my choosing and perfectly safe to eat. |

Really comes down more to processing standards for the food safety aspect of it. I have had medium chicken and don't prefer the taste as much as well. Chicken also doesn't toughen up like a steak will when well done especially the dark meat.

Growing up on the rare occasion we did have steak, hated it.
My dad grew up in the era of basically burn everything on the grill (so you don't get food poisoning) so I thought that's how steak was supposed to be. Med rare for any good cut of steak with a nice sear for me. |

Steak at medium rare to rare is cooked perfect. Chicken not so much.

The Dutch eat a delicacy...raw pork chopped into a spread...that comes from very carefully raised and processed pigs. I've had it, tough to get down for an American, but very good.
From what I was told, they've never had a case of trichinosis. Yard bird comes off the grill at 160, it continues to cook at rest and remains moist. |
