We overcooked some beef tenderloins. Watched everything carefully but they were overdone. The temp readout unit defaulted to deg C instead of F where I had it set last time using it. Just a heads up. They still were great though! |

LOL I used to use two probes, now I have four. Back in my cable probe days, sometimes one would just drift off when a kink caused wires to separate internal to the shielding. Now I have Wifi/Bluetooth Thermoworks, 4 of them. I always use at least two, along with the hardwired chamber monitor. I had one bad charger which lead to a probe not making it through the smoke time. It was replaced free. Also, if your smoker has built in thermocouple and readout, perhaps with bluetooth, don't trust it. Use a certified probe and map your grill to see if all of your shit is in order. My Yoder is 20 degrees off, and from the bullshit their reps have told me and other users, I would suspect all of them are off. 300F or lower settings map 20F low and rarely hit the set temperature. I programmed in an offset and the results are much more acceptable. Above 300F, temperature swings seem to be much more stable. Always double check during a smoke with a certified instant read thermometer. Don't use some bullshit cheapo chinamart unit. |
