Red birria tacos, or so it said on the menu. Looked to be slow roasted beef and cheese, in a tortilla that was spiced up somehow and then fried flat on the grill. You eat it more like a slice of pizza than a taco; in fact, I commented that they were almost like a cross between pizza and tacos. Came with hot sauce and some sort of broth/sauce stuff that you dip the tacos in. Fucking delicious!

Anyone heard of these?

One of the only redeeming qualities of having to move back to this hell hole of a state is the Mexican food.  Birria tacos are so good.

We make birria tacos all the time, we use Sam the cooking guys recipe with an addition or 2, only taco we eat now.

It’s a little dive joint, I guess you could call it a restaurant. For those in the KC area, it’s in Westport, across the street from Char Bar.

Order the consume with it.

I believe traditionally it was goat, and I'm fond of the goat birria and a cup of consume. Dip the taco in the consume, pour some habanero salsa on top and devour!

Beef birria is damn good as well and I won't turn them down, but if goats an option I'm in!

Yes, they're quesabirrias (or less commonly, quesatacos) and they made their way up from Tijuana a few years ago. Three to four years ago, no one had them. Now they are all over the place.
It's basically a quesadilla with birria meat, hence the name, served with a cup of the birria broth.

Although birria was originally made with goat meat, quesabirrias are usually made with beef.

Traditionally yes, but as the recipes moved around to neighboring states in Mexico, others used beef.

Where i come from, we call those meat curtains. Take two of those. Put them side by side and place the green pepper between the flaps. Once a month dip it in hot sauce.
