I just purchased a 4' x 20" piece of live edge wood.  Has plenty of bark on the edges.  It is pine and has a few knots in it for character.   I am making a coffee table out of it.  I plan on coating it in a satin polyurethane.   That being said should I stain it first or leave it the natural color.  I'd assume the polyurethane may darken it a little.

This is going to sound weird but. We’re going to need pictures and a he dimensions of your wood. Is this one solid piece or will you be joining pieces together?  As far as staining goes, it depends on what the other colors of things in the room are. I would use that information on color and ask either a woman, grok, or an interior decorator aka a gay guy.

Myself I like natural wood colors. Polyurethane won’t change it much. If I want a darker color, I use a darker color wood. Things like knots and slight imperfections add character and individuality to the piece.

Most things I see made from wood with a live edge have the bark removed from the live edge, then the sap wood underneath is finished normally.

I made a Coffee table and two end tables recently from a 30" X 8' long slab of quilted bubinga. You'll want to remove the bark, then use a wire brush to get in the small crevices.  I wanted a nice feeling natural feel to it so I left in a slight curves and carefully hand sanded the live edge smooth to the touch.  

It feels nice when you rub your hand over it. I used Waterlox to finish it. Easy to build multiple coats and unlike poly, easy to repair should it become scratched, etc.

Pine is soft as well as Polyurethane.
