I have been wanting Mexican type food for a while.  Any easy keto variations would be appreciated.  I guess I could eat taco filling, but I think the mix is pretty high in carbs.

Ya basically the stuff in a taco on a plate.

Taco Salad if you want to put it on greens.

I sometimes do corn tortillas as they are less bad than flour.

Mexican food Keto is a good idea. Onions, peppers, tomatoes are a lot of flavor and very little carbs.

Ole Mexican Foods Xtreme Wellness High Fiber Low Carb Tortilla. Low carb, I use them for everything. Breakfast burritos, tacos, buffalo chicken wraps, deli meat wraps...

also, Quest nacho chips for taco salads.

When I was doing keto a few years back I would eat stuff like this:
  • fajitas, grilled onions/peppers, avocado/guac, salsa - no tortillas/chips, or low-carb variants if you just can't do without.
  • skirt steak/chicken (fajita meat) with grilled onions, peppers, tomatoes - this was more like a stew, usually served on rice, would order without rice and add serranos if I wanted spicy
  • roasted chili relleno - charred (not battered/fried) poblano stuffed with monterrey-jack/queso blanco and meat (chicken, shrimp, steak), roasted to heat/melt cheese
  • ... Marianos/La Hacienda in DFW makes something like this, poblano al-carbon, ask for grilled veggies instead of the rice/beans it normally comes with
  • Carne guisada - (stew, without potatoes, spicy) - Often served with tortillas, rice, and beans.  Skip those.
  • Chili - bowl of red.  Cheese, peppers, sour-cream, other toppings, if you must.
There is/was (haven't been in a few years) also place around here called Taco Joint that made among other things, breakfast bowls... They had something called a "Tyler plate" on their secret menu.  It was a lot of food but easy enough scale down and make quickly at home.
  • Scrambled eggs, steak fajita meat, grated cheese, jalapenos, couple slices of avocado

Make a thin 6" (or whatever) diameter circle of shredded cheddar cheese on parchment paper and bake in the oven at 350° until it's all melty and starting to brown a little. (Seems like 8 to 11 minutes, IIRC). Take them out and fold them over something to cool - I use long wooden spoons suspended over a large, deep bowl - so they cool and harden into the classic taco shell shape. Fill with your preferred taco fixings. Enjoy.

Adding a little shredded or grated Parmesan to the cheese will help it firm up and toast a little better.

I can eat a lot of these.

Thanks All, sounds good.
The last sprint on keto, I used those tortillas,  along with keto bread.  I think they messed up my ketosis.   I'll try lettuce or cheese crust this time.

I wouldn't have made it through two years of strict keto without my taco salad.  

Just don't use the mix.  Start browning 80% ground beef, chop up a jalapeno and cook it in with the meat.  Salt, pepper, garlic, cumin, cilantro, and a few red pepper flakes and done.

I now prefer that mix over the prepackaged stuff.

I hodge podged  it. Jalapeño,  cayenne,  banana peppers, scallions from the garden. 3.7 pounds 85 percent beef. 9 Oz bacon.  Garlic, soy sauce,  fish sauce,  worcesteshire,  half cup of beef lard.  And a quarter head of cabbage.  Some spices.

Not pretty,  but hopefully calories for the week.

And a bit of that kitchen bouquet,  whatever the fuck that is.

Most taco filling are meat and veg. Salsa is vegetables.

Use your preferred one -leaving out papas or nopalitos- and make tacos using romaine lettuce leaves instead of tortillas.

Thank you, that looks amazing.  I am down 10 pounds over the past 2 weeks.  I do allow one cheat meal a week to keep my sanity.  I may just use that to go full blown Mexican.  I don't plan on keto for life.  I've done it in the past and got addicted to it when the weight was pouring off and I couldn't gain weight no matter how much bacon I ate.  BTBH, I get really sick of eating the same shit over and over.  These fancy meals look great, but my schedule leaves room for simple stuff, like ground beef frittata or a can of salmon over lettuce.  My kryptonite is Italian sandwiches or the braunschweiger sandwich a member here passed on to me.  I need to focus a bit more on overall calories and stick with my workouts.  Getting old sucks.

I'm going through a pack of Guerrero's chipotle right now with some tuna salad.  0 net/ 7 fiber.  Not perfect, but beats celery sticks.
