So I bought some seaweed sheets, a couple of the bamboo rolling mats, some sushi rice, ginger, Wasabi, soy sauce, Sriracha mayo, and some canned crabmeat because that's all the store had (I live way out in the rural Midwest so fancy ingredients are hard to come by.)

Anyhow she likes sushi rolls.  I was going to try to make some California rolls. Then I got online looking at recipes after driving a half hour home only to discover I also need special sushi vinegar.  I ordered some from Amazon and it arrives next week.

Anyhow, I need help in my cultural appropriation endeavor.  

What are some good recipes for sushi rolls that can be made with ingredients you can find at ANY American supermarket?

Use the fake crab sticks and not the canned crab for cali rolls.

Smoked Salmon/Cream Cheese/Cucumber for a Philadelphia roll
Spicy crab with the canned crab and spicy mayo mixed together in a bowl and put in a roll
Tempura fry some shrimp and straighten it out with a toothpick to make tempura shrimp rolls. Boil down some soy sauce and sugar for "eel sauce"
If you have access to Ahi Tuna, you could utilize that as well.

My daughter is the same.

Carrot, cucumber, avocado, cream cheese, fish. I've used traditional fish, but also smoked salmon and even fish sticks. Makes it cheap and easy and she doesn't care.

You don't need sushi vinegar in my opinion. I've used whatever is on hand for the vinegar, sugar, salt. Apple cider, white - don't overthink it.

Hell, I don't even use the rolling mat, anymore.

What about the crunchy bits that come on dynamite rolls?  Is is just tempura crumbs?

OP you mentioned you are in a rural area but could you have flash frozen ahi shipped to you?
