According to Wiki what the OP posted is the original chicken and waffles. In the 1600's they couldn't afford to waste a bunch of oil just for frying chicken.
Description Chicken and waffles, as a combined recipe, first appeared in the United States' colonial period in the 1600s in Pennsylvania Dutch country.[2] The traditional Pennsylvania Dutch version consists of a plain waffle with pulled, stewed chicken on top, covered in gravy.[2] A version using fried chicken is associated with the American South. The soul-food version of chicken and waffles grew in popularity after the opening of the Wells Supper Club in Harlem, New York, in 1938.[2] The waffle is served as it would be for breakfast, with condiments such as butter and syrup. My mother used to make a similar recipe chicken and waffle dish with gravy and a side of cranberries. It is freaking amazing and one of my favorite dishes.

There used to be a place East of Harrisburg, PA that served all you can eat chicken and waffles on Friday nights. Had to get there early or you couldn't get a parking spot. Good stuff.
My grandparents made something similar with turkey the day after a holiday to feed the family members that slept overnight in their place. Really miss those breakfasts. |

My mom is from PA. I was a teenager before I discovered meat could be prepared other ways other than just boiled. Round steak boiled in tomato soup was her signature dish.

It’s a great meal for thanksgiving leftovers. Cut up some turkey and heat it up in gravy. Pour over waffles and leftover stuffing. Always a big hit. Also from Pennsylvania.
