Your knowledge does me no good unless it comes with a fully built 4x6ish table with stands in the middle that are out of the way of the chairs, and the table top isn't too thick for the boom things. And the wood is solid and sturdy. And it's really pretty. And under $700.

if you really want a sheet of plywood for a 4'x8' table top,

get one of the folding 8' tables previously discussed
put the plywood on top, with the table in the center
put fabric drape or what ever cover you want, on top

no sagging. you can put the plywood sheet against a wall and fold the table to get them out of the way.
just don't put your weight on the edge of the plywood when it's on the table, and tip it over

edit - thinking more about it, if it is unstable, you might need to put 2 folding tables side by side.

This particular table was none of those things besides being under $700. As I said earlier, I wish you luck in your table quest. I hope you find what you're looking for, but I just don't think it exists. Tables are fickle.

Main ingredient needs to be angry play dough.  Quite stable until prodded appropriately (will actually burn when a flame is applied).  Gunpowder is good, but any little spark and your lunchbox ends up as an IED.  Wonder how tannerite holds up to baking temps?

Use the 4' folding tables at each end, find a way to connect the table to the plywood so it doesn't slip (maybe put one edge 24" in)

Not to scale.  Probably cost about $150 for a 4x8 table, have to use 3/4" plywood for the least amount of sag.  If you want to get cute with it, add a stiffener add it lengthwise down the center between the two smaller tables, a couple of 1x1 to 'center' the small tables and then it could be disassembled altogether.

Maybe have an L-shaped bracket to hold the tables in place, which could be secured with a screw or bolt, easily loosened so the folding table could be removed.

Not certain it would actually work, since I don't really know how long the smaller folding tables are, they might be 4', which might work.
