2 lb ground chuck
1-1/2 lb ground pork
2 eggs
8 oz plain panko breadcrumbs
Big squirt of bbq sauce
Big splash of heavy cream
Big pile of bbq rub
4 diced up jalapenos
1/2 lb high temp cheddar

Mix all that up and stuff it into a loaf pan, then put it in the fridge for a while to firm back up so it doesn't fall apart on the grate. Add rub to the outside, then smoke at your preferred temp until it hits 155° internal. You can do a bbq sauce or ketchup glaze if you want, I didn't feel like it this time.

I think it's because I used a disposable loaf pan and it wouldn't hold it's shape when I put the meat in. Before I make it again I'll probably try to find a similarly-sized rigid pan.
