Leftover meatloaf is good the next day but I don't often smoke them and usually only make a 1 pound loaf in the oven for a meal and possibly next day leftovers.  Would like to make up about 2 or 3 pounds on the smoker and freeze individual portions.

I have a vacuum sealer and would likely use it before freezing.  If you have a method and have done this I would like to hear.

Cut the meatloaf into desired serving portions.

Place portions in ziploc bags or on plates, covered in plastic wrap.

Freeze portions until firm.

Vacuum bag frozen portions - now they won't squish down to mush.

I usually smoke 5 meatloafs at a time, let them cool in the fridge over night, cut them into servings out of the pan, each getting their share of the juices that have solidified, then vacuum seal and freeze. then when I want to serve, warm them up in a pan of hot water in the bag, drop the contents of the bag on a plate, and nuke it enough to bring to serving temp, add sides.  nice juicy meatloaf

I picked up 3 pounds of 80/20 and plan to mix up and put on the smoker Thursday.

Used saltines at times and panko breadcrumbs others, even a mix depending what was in the pantry..  I found this box that I forgot about. Never put them in meatloaf before...  Might mix them 50/50 with breadcrumbs to use some up as a test.

Cooked meats freeze great.  Smoked meatloaf never lasts long enough to make it to the freezer in my house, but I would have no problem freezing it and eating later.

I have this problem too. I can't think of any meat that disappears faster.

Parchment paper will keep your pan clean.....if you remember to use it.   I often just put parchment over cardboard and us the pan only for transport and installation.

I just refrigerate over night then food saver, and off to the freezer.
Works just fine.
